Mrs. Wish's Green Beans & Potatoes
Instructions:
First, let's prepare the beans. Snap the ends off of the green beans and snap the beans in half or thirds if they are long. Then place the beans in a colander and give them a good rinse; be sure to drain them well because water and hot grease can lead to splattering grease, a big mess and possible burns.
Next, get your small potatoes ready by giving them a healthy scrub under running water. Potatoes that are larger can be halved or quartered so they cook faster and are easier to eat.
In a medium to large Dutch oven or large saucepan, cook the chopped bacon on medium-low heat until it has rendered most of its fat and is beginning to turn brown. Add the garlic and onion and continue cooking on medium-low heat until the onion is translucent, about 5 minutes.
Carefully add the green beans and potatoes, and add enough water just to cover everything (or you can use chicken or vegetable broth as a flavorful substitute). Bring it to a boil, then reduce the heat to low. Add seasonings according to taste (if you substituted broth for water, you may need less seasoning). Remember that you can always add salt and pepper at the dinner table. Cover the pot and simmer until the beans are tender and the potatoes can easily be pierced or split with a fork, which should take about an hour. Take care not to overcook the beans because no one likes mushy green beans!
