Instructions:

Blend flours and salt with mixer. Add eggs. Once those are blended in, the consistency should look like little clumps. Add oil and water in equal amounts bit by bit until the dough is a single cohesive mass that is not very sticky, but will probably all attach to the mixer blade. Stop the mixer, pull out the dough and work it into a ball, adding flour if it is sticking to the kneading surface or your hands. Once the dough has been formed into a ball, put it in a bowl and cover it with plastic wrap. Let it rest for at least an hour. After the hour is finished, cut the ball into four equal portions and pull each portion out and form your pasta, leaving the other parts covered in the bowl so the dough does not dry out. Spaghetti & linguine will take about 3 minutes to get to al dente in boiling water.
