Instructions:

Mix all ingredients with your mixer or food processor, except the water and olive oil. Add just a little bit of water and then a little bit of olive oil, just a little at a time until the dough becomes the right consistency – a cohesive mass that is not sticky. When it actually feels like dough, place it in a bowl and cover it with plastic wrap. Let it rest for an hour or so. Then you want to cut the ball in 4 equal pieces and roll them out to about 1/16” thick and cut them in about 1/4” wide strips. If you really want to make it easy for yourself, get a pasta machine. I had an Atlas one that I bought off the internet, but you can also find them at places like Bed Bath and Beyond or another place that has specialty kitchen appliances. Now if you really want to get fancy, you can upgrade to a Kitchen Aid mixer and get the pasta roller and cutter attachment set. This is what I have now, and I love it, you can do the whole thing with the Kitchen Aid mixer, from making the dough to cutting it.

After the noodles have been cut, place them in a large pot of boiling water for 3 minutes. Drain and then you're done! Enjoy!
