Big Jake's Tri-tip
Instructions:
I use this on my tri-trip,but works great on just about any beef.
If using on tri-tip, marinade 1 tri-tip roast with the above ingredients in a plastic bag in the fridge for up to 2 days.
- Start on the smoker*, place the beef fat side down and smoke on the "smoke" setting for 30 minutes.
- Then crank up to 225 F and smoke for 1 hour.
- Flip over and smoke on 225 F for another hour and 15 minutes.
- Turn up to 375 F and "grill" it for the another 15 minutes, flipping it a few times.
- Pull off at an internal temp of 135 F.
- Wrap in foil and let rest for 15 minutes,then slice against the grain.
*Note: this is for use on a pellet type smoker.
