Big Jake's Tri Tip Chili
Instructions:
I'II use the leftovers of a tri-tip that I slow smoked on my smoker (using my big jakes tri-tip recipe, coming soon) for this recipe. I would not recommend using a raw tri-tip.
First add a little bit of olive oil to a stock type pot, then throw in the bacon (on medium heat), make sure you stir the bacon every couple of minutes. Cook until it turns brown, then using the top of the stock pot lid, drain the olive oil and bacon fat out of the pot.
Now add the tri-tip, garlic, onions, jalapeno, and green pepper. Cook until onions are caramelized. Then drain the fat off again. Finally, add the other ingredients,reduce to low, and simmer for 1 ½ hours, stirring occasionally.
Serve with shredded cheddar cheese on top, and discard the bay leaf.
